how do you make the bckground all black or all white?

we now have a home studio with one black and one white background. Sometimes though the background is not totally black so we change a bit the contrasts.
Before (like on that pic: [link] ) we used to photoshop the background, it's easy with a good software. For some photos we use a black sheet. And well sometimes I just don't know what happened with the camera but we had a black background without doing anything!

I personnaly do it with paint shop pro. I use the magic wand to cut out the background and then I turn it all black or white . Your photo must have a proper light that fits with the background, to have something natural =)
